New Mexico Asado


I made this Asado the other night using some of the New Mexico Red Chile sent to me by my prima (Cousin) Elba Burke from Las Cruces, New Mexico. Asado is, for all practical purposes, Chile Colorado, but cooked in a slightly different manner, usually on a disc, a large, usually homemade cooking pan resembling a wok. I don't have a disc but our large cast iron skillet worked just fine. It was delicious.
