Green Chile

Green Chile

Tonight's Green Chile was fantastic. My wife was showing her Tex-Mex roots and took a different route today. She used a “Chili Grind” beef, in other words beef cut for Chili, as opposed to Chile (with an E). The texture and taste was phenomenal. I don't know if the picture does it justice.
Green Chile (Chile Verde) in any form, with any meat is my favorite meal period. For my family it's more than a favorite meal. It's an edible family heirloom, passed on from my grandfather to my father, to me and for the last several years, my wife Jeri. We all love it.
My father was from New Mexico and that was the food he loved. My mother learned to cook the food he loved. Jeri has also learned to cook the food I love.
